Torta de ciruelas
Ingredientes
Ciruelas secas (presidente) 300 g
Manteca 200 g
Bicarbonato de sodio 1 cda
Agua 200 cc
Huevos 3
Azúcar 200 g
Harina de trigo leudante 380 g
Polvo para Hornear 1 cdita
Esencia de vainilla 1 cdita
Canela molida 1 cdita
Pasas uva 100 g
Nueces 100 g
Glasé
Azúcar impalpable 200 g
Licor c/n
Ciruelas y nueces para decorar
Colocar en un recipiente las ciruelas presidente cortadas en cubos pequeños, la manteca, el bicarbonato y el agua hirviendo. Mezclar y dejar reposar hasta que se enfríe la preparación.
Incorporar batiendo los huevos previamente ligados, el azúcar, la harina mezclada con el polvo para hornear, la esencia de vainilla y la canela molida. Por último agregar las pasas de uva y las nueces picadas.
Armado
Verter la preparación en un molde de 26 cm forrado con papel manteca lubricado. Llevar al horno precalentado a 160º C durante 45 a 60 minutos.
Retirar, enfriar y desmoldar sobre rejilla para cubrirlo con el chocolate cobertura disuelto y decorar la superficie con las ciruelas y las nueces.

Old Fashioned Prune Cake
Old Fashioned Prune Cake:
1 cup prunes
1 1/2 cup sugar
3 whole eggs
1 cup canola or vegetable oil
2 cups flour
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon allspice
1 teaspoon cinnamon
1 cup buttermilk
1 teaspoon vanilla Extract
1 cup of chopped walnuts
For the icing (optional):
1 cup sugar
1/2 cup buttermilk
1/2 tsp baking soda
4 tbsp butter
1/2 tsp vanilla
In a small saucepan, simmer the prunes with water to cover for about 8 minutes until most of the liquid is gone and the prunes are soft.
Drain the liquid and mash the prunes with a fork. Set aside.
In a large bowl, mix together the eggs, sugar and oil.
In a separate bowl, sift together the dry ingredients and walnuts. Combine the wet & dry ingredients and add the buttermilk and mashed prunes.
Pour batter into a greased 9 x 13 baking dish.
Bake at 325F for 30-35 minutes.
If you are going to make the icing, combine the ingredients 5 minutes before the cake is done. Simmer the icing ingredients for 5 minutes in a saucepan, and pour over the cake as soon as the cake comes out of the oven and let cool.

2 extra-large eggs
500 ml flour
10 ml baking powder
10 ml mixed spice
1 ml salt
125 ml milk
Boil the prunes in enough water to cover until they are soft. Drain and pit them and cut into smaller pieces.
Preheat the oven to 180 C. Grease or use cooking spray on a cake tin with a diameter of 23 cm (not a layer cake tin).
Cream the butter or margarine and castor sugar. Add the eggs one at a time and beat well after each addition.
Sift the cake flour, baking powder, mixed spice and salt together. Stir the flour mixture and two thirds of the milk alternately into the egg mixture. Add the prunes and mix well. Stir in the rest of the milk.
Spoon the batter into the cake tin. Bake for 50 – 60 minutes or until done. Turn the cake out carefully onto a wire rack and let it cool. Sift icing sugar over the cake or ice it with butter icing of your choice. Makes a medium cake.

1 1/2 c sugar
3 eggs, beaten
2 1/4 c flour
1 c buttermilk
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
3/4 tsp nutmeg
1/4 tsp allspice
1 c prunes, cooked, drained, and chopped
FOR GLAZE:
1 c buttermilk
1/4-1/2 c sugar (adjust to your desired sweetness)
Directions
1 For cake:
Cream first three ingredients together; blend well. In seperate bowl, combine dry ingredients and mix well. Add flour mixture and buttermilk to creamed mixture; mix well. Stir in prunes. Spray glass pan with non-stick spray and pour mixture into pan. Bake at 375 degrees for 30-40 minutes, or until cake is done.
2 For glaze:
Heat buttermilk and sugar in a saucepan until sugar melts. (Don't allow to boil.) Pour gradually over hot cake, allowing glaze to soak in before adding more. You could poke holes in the cake to help it along.

Don't let the prunes scare you!
Think of a super moist cake with autumnal spices.
Possibly a cross between applesauce cake and gingerbread except better!
The glaze soaks all the way through.
I promise it will be a favorite! Nobody will know it has prunes in it!
And yes, it was my birthday cake this year!
Prune Cake with Glazed Topping
3 eggs
1 1/2 c sugar
1/2 c vegetable oil
1 c buttermilk
1 c cooked and mashed prunes
1 t vanilla
2 c flour
1 t baking powder
1 t baking soda
1 t cinnamon
1 t nutmeg
1 t allspice
To prepare the prunes, place in a glass measuring cup and cover with water. Microwave 3 minutes. Drain and rinse with cold water to cool. Run through food processor until they are a smooth paste.
Then proceed with the recipe.
Mix wet ingredients in mixer and blend well.
Add sifted dry ingredients alternately with buttermilk. Beat well.
Pour into a greased 9x13 pan. Bake 350 for 40-50 minutes. Mine took 35.
Do a toothpick test.
Glaze
1 1/2 sticks butter
1 1/2 c sugar
3/4 c buttermilk
2 T white corn syrup
1 t vanilla
Place all ingredients in deep sauce pan and stir over medium
low heat just until it begins to boil.
Remove from heat and add 1 t of baking soda.
Stir until dissolved and foamy. Pour slowly
over hot cake until absorbed.
