250 g dried prunes
125 g butter or margarine
250 ml castor sugar
2 extra-large eggs
500 ml flour
10 ml baking powder
10 ml mixed spice
1 ml salt
125 ml milk
Boil the prunes in enough water to cover until they are soft. Drain and pit them and cut into smaller pieces.
Preheat the oven to 180 C. Grease or use cooking spray on a cake tin with a diameter of 23 cm (not a layer cake tin).
Cream the butter or margarine and castor sugar. Add the eggs one at a time and beat well after each addition.
Sift the cake flour, baking powder, mixed spice and salt together. Stir the flour mixture and two thirds of the milk alternately into the egg mixture. Add the prunes and mix well. Stir in the rest of the milk.
Spoon the batter into the cake tin. Bake for 50 – 60 minutes or until done. Turn the cake out carefully onto a wire rack and let it cool. Sift icing sugar over the cake or ice it with butter icing of your choice. Makes a medium cake.
